Paul and Dorothy Fidrych opened Paul's Pasta Shop in 1988. They reside in Ledyard, Connecticut. They have been married since 1984.
Dorothy is a 1981 Graduate of Johnson and Wales University with an Associates Degree in Culinary Arts. She is a graduate of St. Bernard High School in Uncasville where she grew up.
Paul is a 1982 Graduate of the Culinary Institute of America with an Associates Degree in Culinary Arts. He is a graduate of Stonington High School.
They have three adult sons who , after many years of experiencing Paul's Pasta , are enjoying life outside of the Paul's Pasta world.
Having grown up in the area affords Paul and Dorothy a vast knowledge of the local landscape including area towns, businesses and the people who live here.
Both have worked at many local restaurants of past and present including the Harborview Restaurant, where they first met, Skipper's Dock, Steak Loft, Seaman's Inne, Avon Old Farms Inn, Farmington Country Club, Inn at Chester, and many others. The experiences at these places all have helped to make Paul's Pasta what it is today.
